Fried Chicken Recipe (Serves 4)

Ingredients:

For marination:

  • Chicken drumsticks or thighs – 8 pieces
  • Buttermilk (or thin yogurt) – 1 cup
  • Garlic powder – 1 tsp
  • Onion powder – 1 tsp
  • Red chili powder – 1 tsp
  • Salt – to taste
  • Black pepper – ½ tsp

For coating:

  • All-purpose flour – 1 cup
  • Cornstarch – ½ cup
  • Baking powder – ½ tsp
  • Salt – ½ tsp
  • Black pepper – ½ tsp

For frying:

  • Soybean or refined oil – as needed

Instructions:

  1. Marinate the chicken:
Clean and pat dry the chicken pieces. Mix them with buttermilk (or yogurt) and all spices. Cover and refrigerate for 4–6 hours (the longer, the better for tender meat).

  2. Prepare the coating:
In a separate bowl, mix flour, cornstarch, baking powder, salt, and pepper.

  3. Coat the chicken:
Take the marinated chicken and coat each piece thoroughly in the flour mixture. For extra crunch, dip the coated piece back in buttermilk and again in flour (double coating).

  4. Fry the chicken:
Heat oil on medium flame. Carefully drop the chicken pieces in and fry for 10–15 minutes until golden brown and crispy.

  5. Serve:
Drain excess oil on paper towels. Serve hot with ketchup, garlic mayo, or your favorite dip.
